Founded in Stockholm by brewer Henok Fentie and artist Karl Grandin in 2010, their first beer was a Belgian style beer called Leon (later renamed to Levon). They are originally a “nomad brewery” who rented space in other breweries such as Dugges. This continues to this day, but they finally built their own brewery in an old church in Stockholm in 2020. With a reputation for quality beers produced in several breweries around Europe, Omnipollo is an extremely varied and innovative brewery. This is a German style pilsner that has been conditioned with oak.

This poured with a clear golden colour, excellent clarity and a bright white head that lingers well. The aroma combines fresh bread crust, light floral hops and a subtle layer of oak that I wish would have been a bit more upfront. On the palate, crisp pilsner malt forms the backbone, supported by a restrained bitterness and delicate notes of herbal hops. The carbonation is lively and refreshing, while the body remains light to medium, maintaining the drinkability expected of the style. The finish is clean and dry, with grassy notes, soft bitterness and a touch of malt sweetness finising off the beer.

I thought that this was a well made pilsner, however I found the oak notes to be slightly lacking. I wanted those aspects to be slightly more raised to give the wood and vanilla notes a bit more focus. Apart from that though this was a solid beer that I would be happy to drink again.
