All In Brewing was founded in Gothenburg in 2012 and has built a reputation for producing a wide range of innovative and experimental beers. This particular release was brewed in collaboration with DMC Brewery and Beerbliotek as part of a festival-focused project. A white stout is an unusual interpretation of the stout style, brewed using a pale malt base rather than dark roasted malts, with traditional stout-like flavours often recreated through adjuncts such as cold-brewed coffee. In this case, ginger and what I assume to be apple essence have been added to create an even more distinctive flavour profile. White stouts remain a rarity in Sweden, and I’ve certainly never come across one featuring apple and ginger before, making it an easy choice for the tasting lineup.
As expected from a white stout brewed without roasted malts, the beer poured a clear amber colour with a light, fluffy head. Ginger dominated the aroma from the outset, supported by softer notes of baked apple and pie crust. While the apple character was present, I found myself wishing it had been given more room to shine, as the ginger felt slightly overpowering. On the palate, the ginger evolved into a gingerbread-like character, accompanied by sweet doughy malt notes. Gentle red apple flavours emerged in the background, but I struggled to find much of the stout-inspired character that the style typically aims to deliver. The finish was crisp, spicy, and refreshing, with the ginger once again taking centre stage.
This was certainly an interesting and memorable beer, but for me the ginger was simply too dominant. It overshadowed many of the other flavours and left the beer feeling somewhat one-dimensional. That said, its originality alone made it a worthwhile addition to the tasting, and I’m glad we had the opportunity to try something so unusual.
