Baileys Irish Cream is regarded as the original Irish cream liqueur. It was introduced in 1974 by Gilbeys of Ireland, which wanted to create a new kind of drink combining two iconic Irish ingredients: cream and whiskey. The cream and the alcohol are blended in a way that prevents them from separating over time by using a vegetable oil-based emulsifier. The name “Baileys” comes from a restaurant called Bailey’s Hotel in London, and the signature “R.A. Bailey” on the label is fictional. This is the limited-edition mint and chocolate edition, and as its Christmas I thought it would be fun to have in the tasting.

This isn’t something I’m going to spend much time reviewing, however if you like cream and mint you’ll probably like this. Thick, rich and delicious, I thought this was lovely. It’s not something I would drink every day but on special occasions I could absolutely see myself trying a little sip of this.
